Ячмень (Hordeum vulgare L.) и овес (Avena sativa L.) – зерновые культуры, относящиеся к одним из основных источников питания и кормов в Российской Федерации. Они содержат белки, различные группы витаминов, жиры, углеводы, β-глюканы, минеральные вещества и разнообразные биологически активные соединения, в том числе антоцианы. Антоцианы привлекают все больше внимания в связи с широким спектром полезных свойств для человека. Все это позволяет рассматривать зерно ячменя и овса как потенциально перспективный экономический продукт и компонент функционального питания. Цель данной работы оценить относительное содержание антоцианов в образцах ячменя и овса с различной пигментацией зерновки и цветковых чешуй. Материалы и методы. Изучено 32 образца ячменя и 11 образцов овса спектрофотометрическим методом. Экстрагирование антоцианов из зерновок ячменя и овса проводилось 1% раствором HCl в метаноле. Результаты и обсуждение. В результате изучения выделены образцы и разновидности с наибольшим содержанием антоцианов: ячмень − к-15904 (Китай), к-19906 (Монголия), к-18709 (Япония), к-18723, к-18729 (Канада), к-17725 (Турция), относящиеся к разновидности var. violaceum; к-29568 (Япония) – var. densoviolaceum; к-8690 (Эфиопия) – var. griseinigrum; к-28205 (Германия) – var. nudidubium; овес − к-15527 (A. ayssinica Hochst. var. braunii Koern., Эфиопия) и к-15245 (A. strigosa Schreb. subsp. brevis var. tephera Mordv. ex Sold. et Rod., Польша). Заключение. Полученные результаты показывают, что коллекция ВИР включает потенциально ценные образцы для разработки сортов с повышенным содержанием антоцианов, которые могут быть использованы для расширения ассортимента функциональных продуктов.</p></abstract><trans-abstract xml:lang="en"><p>Background. Barley (Hordeum vulgare L.) and oat (Avena sativa L.) are grain crops belonging to one of the main sources of food and forage in the Russian Federation. They contain proteins, various groups of vitamins, fats, carbohydrates, β-glucans, minerals and different bioloactive compounds, including anthocyanins. Recently, much attention has been given to anthocyanins due to their various valuable properties. Therefore, the grain of barley and oat is a potentially promising economic product and a component of functional nutrition. The aim of this work was to estimate the content of anthocyanins in barley and oat accessions with different pigmentation of kernels and lemma. Materials and methods. 32 barley and 11 oat accessions were studied by spectrophotometry. Anthocyanins were extracted from barley and oat kernels with a 1% HCl solution in methanol. Results and discussion. As a result of the study, accessions and varieties with the highest content of anthocyanins were identified: for barley these are k-15904 (China), k-19906 (Mongolia), k-18709 (Japan), k-18723, k-18729 (Canada), k-17725 (Turkey) belonging to var. violaceum; k-29568 (Japan) – var. densoviolaceum; k-8690 (Ethiopia) – var. griseinigrum; k-28205 (Germany) – var. nudidubium; and for oat these are k-15527 (A. ayssinica Hochst. var. braunii Koern., Ethiopia) and k-15245 (A. strigosa Schreb. subsp. brevis var. tephera Mordv. ex Sold. et Rod., Poland). Conclusion.
